Chipmunks foam, candied apricots!

Mousse chipmunks flavored apricots.
The apricots are arriving on our shelves and especially in my garden. 
 A dessert with the first fruits of the sun. This is a recipe magazine Taste " last month, a real delight for little money.

Foam small Swiss Apricot

Ingredients for 6 people. Preparation 15 minutes + 3 hours in the fridge.

  • 6 chipmunks
  • 4 eggs
  • 50g caster sugar
  • 8 apricots
  • 1 vanilla

Go to your whips!

  1. Separate the whites from the yolks of eggs.
  2. Drain the chipmunks e t mix them with egg yolks with half the sugar.
  3. Beat the egg whites until stiff with a pinch of salt. As soon as they become firm, add the remaining sugar and continue beating 1 minute. Stir in the mixture based on egg yolks.
  4. Place the foam in your serving dish, put things cool.
  5. Open your apricots in half, drop them in a saucepan with vanilla bean, split in two, add a glass of water and cook for 10 minutes let cool.
  6. Just before serving, pour your preparation on your apricot mousse and decorating your vanilla bean.

Cooking Tips:
Choose small Swiss quality, you remember the little cardboard box of our childhood.
Cover your foam container with a paper wrap, health guaranteed.
It's a dessert you can make the day before, I tried!
But why not enjoy a "small Swiss tiramisu", although fewer calories!
And if you have a red fruit sauce in your refrigerator, a few raspberries or strawberries, you can enjoy a mousse chipmunks "all red".
This dessert will wonderfully presented in a glass.
